Emma's No Eggscuses Spring Treat

My sweet girl loves to tinker with recipes or figure out how to create something she has seen before.  In honor of spring finally arriving in the south, with warmer temperatures and sunshine, she decided to modify one of my recipes to create a healthy spring treat - making sure it also used only the MRT/Leap food sensitivity tested ingredients (I know!  so cute).  She did all the heavy lifting on this one and even filmed and edited a video, handled photography and fortunately, helped clean up the kitchen afterward!  So, without further delay I present to you:  Emma's No Eggscuses Spring Treat:


  • 1/2 cup sliced almonds
  • 1/4 cup coconut chips
  • 1/4 cup chopped walnuts
  • 2 Tablespoons honey
  • 2 Tablespoons cocoa powder
  • 2 Tablespoons coconut oil*
  • Fruit**


  1. Mix nuts together in a bowl and set aside
  2. Mix remaining 3 ingredients in a saucepan, and heat on low until well blended (*if you want a thicker chocolate sauce, omit 1 Tablespoon of the coconut oil)
  3. Use a cookie dough scoop and place 1 scoop in small cupcake liners or a small cupcake pan, if you have one
  4. Use your thumb or index finger to make a depression in the middle to create a nest where your fruit will go
  5. Refrigerate about 30 minutes
  6. Top with your favorite fruit or candy

**MRT/Leap 170 test includes grapes and strawberries, shown on the video but you could use any fruit or even use jelly beans or other candies if not creating this recipe for MRT/Leap elimination protocol.
